Ingredients
- 2 tablespoons oil
- 450 g beef sausages
- 2 garlic cloves minced
- 1 onion sliced into half moons
- Half to one tablespoon curry powder
- 3 tablespoons flour dissolved in broth
- 2 cups chicken broth mixed with the flour
- Half teaspoon salt
- Half teaspoon black pepper
- 1 cup frozen peas
Method
- Heat the oil in a large pan. Add the onion and stir for about thirty seconds then add the sausages. Cook according to packet instructions and remove them three to four minutes early.
- Take the sausages and onion out of the pan and set aside.
- Pour the chicken broth and flour mixture into the pan whisking as it heats. It will begin to thicken.
- Stir in the curry powder salt and pepper.
- When the sauce has slightly thickened return the sausages and onion. Mix cover with a lid and cook for three to four minutes.
- Add the frozen peas and cook for another two minutes.
- Serve hot with mashed potatoes. Sweet potato mash works very well.

Tips
- Add more curry powder if you want a stronger flavour.
- Use a whisk when heating the broth for a smooth sauce.
- Serve with rice if you want a lighter option instead of mash.
Storage
Keeps in the fridge for up to three days. Reheat gently on the stove and add a splash of water if needed to loosen the sauce.
