Ingredients
- 1 loaf sourdough bread middle cut out
- Quarter carrot finely grated
- Quarter red capsicum finely diced
- Ham finely diced
- 3 eggs
- 2 shallots finely sliced
- Half teaspoon cooking salt
- Quarter teaspoon ground black pepper
- Quarter cup shredded mozzarella cheese
Method
- Preheat your oven to 180 c fan forced.
- Place all ingredients except the eggs and cheese in a bowl and mix well.
- Spoon this mixture into the cutout section of the sourdough loaf.
- Crack in the three eggs then season with salt and pepper. Top with mozzarella.
- Bake for about twenty minutes or until the cheese is melted and golden.
- Keep an eye on it to avoid overcooking.

Tips
- Use a deeper sourdough loaf for more filling.
- Add extra mozzarella for a stronger cheese pull.
- For a spicy version add chilli flakes before baking.
Storage
Best eaten fresh. If storing keep in the fridge for one day. Reheat in the oven or air fryer to crisp the bread again.
