Ingredients
- 125 g pre washed rocket
- 3 small ripe peaches, cut into small cubes
Dressing
- 1½ tablespoons fresh lemon juice
- 1½ teaspoons Dijon mustard
- 4½ tablespoons extra virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Method
- Whisk together the lemon juice, Dijon mustard, olive oil, salt and pepper until well combined. Set aside.
- Add the rocket to a large bowl and scatter over the peach cubes.
- Pour the dressing over the salad just before serving and toss gently to coat.
Tips
- Dress the salad just before serving to keep the rocket crisp.
- Pairs well with grilled chicken, prosciutto, or burrata.
- Swap peaches for nectarines when out of season.
Storage
- Best eaten fresh.
- Undressed salad can be stored in the fridge for up to 24 hours.
- Once dressed, serve immediately.
