Maggi Chicken & Egg Soup (15 minutes!)
A quick comforting noodle soup with chicken, egg ribbons, herbs, and crunch

Ingredients
- 3 packets Maggi 2 Minute Noodles, each packet roughly broken in half
- Seasoning sachets from the Maggi noodles, separated
- 6 to 8 cups water (about 7 cups works well)
- 1 chicken breast (about 400 g), sliced into large chunks
- 3 eggs, roughly whisked
- 3 garlic cloves, finely chopped
- 1 carrot, peeled and diced
- 2 spring onions, chopped
- 1/2 cup coriander, roughly chopped and separated (1/4 cup for cooking, 1/4 cup for garnish)
- 1 tsp cooking salt
- 1/4 tsp freshly cracked black pepper
Method
- Pour the water into a large pot over high heat and bring to a rolling boil.
- Once boiling, add the chicken, salt, pepper, carrots, garlic, spring onion, and 1/4 cup coriander. Stir gently, then put the lid on.
- Cook on high with the lid on for about 12 minutes, until the carrots soften and the chicken is cooking through.
- Remove the lid and add the noodles, the seasoning sachets, and the whisked eggs.
- Stir gently for a moment, then put the lid back on and cook for about 2 minutes, or according to your noodle packet.
- Remove the lid, sprinkle over the remaining coriander, and stir gently.
- Serve immediately while hot.
Tips
- Use 6 cups water for a thicker bowl, or 8 cups for a more soupy bowl
- Stir the eggs gently so you get soft egg ribbons, not scrambled chunks
- Taste before adding extra salt, because the seasoning sachets already have salt
- Add a squeeze of lemon at the end if you want it brighter
Storage
- Best eaten fresh, because noodles continue to soften in the broth
- If storing, keep airtight in the fridge up to 24 hours and add a splash of water when reheating
- Add fresh coriander and spring onion after reheating for the best flavour
