Zaatar Lemon Dressing
A bright zesty herby dressing perfect for salads especially Lebanese style cabbage salads
Ingredients
- 2 to 3 garlic cloves minced
- Three quarter to 1 teaspoon cooking salt
- Juice of 1 and a half lemons
- One third cup extra virgin olive oil
- 1 and a half teaspoons zaatar
Method
- Place all ingredients into an airtight container that will not leak.
- Shake well for at least thirty seconds until the oil emulsifies.
- Pour over your favourite salad and serve immediately.

Tips
- Add more lemon for a sharper flavour or more oil for a richer taste.
- For a thicker dressing add a teaspoon of tahini.
- This is amazing on cabbage salad shredded lettuce tomatoes cucumbers or roasted vegetables.
Storage
Keeps in the fridge for up to three days. Shake again before serving as the ingredients will naturally separate.
