Latin Chicken Soup

Ingredients
Base
- 3 tablespoons vegetable oil
- 1/2 medium red onion, diced finely
- 3 to 4 garlic cloves, diced finely
- 1/4 cup finely sliced coriander
- 1 1/2 teaspoons smoked paprika
Soup
- 5 to 6 large chicken drumsticks
- 7 to 8 cups water, plus more if needed
- 2 beef stock cubes, crumbled
- 2 1/2 tablespoons cooking salt, to taste
- 1 teaspoon black pepper
Vegetables and Serving
- 2 medium potatoes, cut into large chunks
- 1/2 butternut squash pumpkin, cut into large chunks
- A handful of coriander, roughly chopped
- Freshly squeezed lemon juice, to taste
Method
- Heat the vegetable oil in a large pot over medium heat. Add the red onion, garlic, and finely sliced coriander together and sauté for about 2 minutes, stirring regularly.
- Add the smoked paprika and stir for 30 seconds, up to a maximum of 60 seconds, until fragrant. Turn the heat down to low.
- Add the chicken drumsticks, placing them meat side down to develop some colour. Cover with the lid and cook for 3 minutes.
- Remove the lid, turn the drumsticks over, then place the lid back on and cook for another 2 minutes.
- Add the water along with the cooking salt and black pepper. Stir gently.
- Crumble in the beef stock cubes and stir well to dissolve.
- Cover with the lid and cook on low heat for 20 minutes. Check halfway through to ensure it is not drying out. It should not, but this can depend on your pot.
- Remove the lid and add the potatoes and pumpkin. Add a little more water if needed so everything is just covered.
- Cover with the lid again and cook for another 15 minutes, or until the vegetables are tender and the chicken is cooked through.
- Turn off the heat and stir through the roughly chopped coriander.
- Serve with freshly squeezed lemon juice to taste if desired.
Tips
- Keep the heat low once the water goes in so the broth stays clear
- Taste the broth before adding all the salt, stock cubes already add salt
- If your pot runs hot, add a splash more water during the simmer so it does not reduce too much
- Add lemon at the end so the flavour stays bright
Storage
- Store airtight in the fridge for up to 3 days
- Reheat gently on the stove, add a splash of water if needed
- Best for freezing without potatoes, but it can still be frozen in portions for up to 2 months
