  • 2 bunches curly parsley, finely chopped
  • 2 tomatoes, diced
  • 2 green onions, chopped

  • Juice of 1 medium lemon

  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Method
  1. Chop the parsley, tomatoes, mint, and green onion.
  2. Add everything into a large mixing bowl.
  3. Pour in the lemon juice, olive oil, salt, and pepper.
  4. Toss well until everything is evenly combined.
  5. Let it sit for 10 to 15 minutes, then serve.
