French Dressing
A punchy white wine vinegar dressing with Dijon, garlic, and a silky olive oil finish

Ingredients
  • 2 tablespoons finely chopped red onion (from about 1/4 of a red onion)
  • 1/2 teaspoon cooking salt
  • 1/4 teaspoon freshly cracked black pepper
  • Just under 1/4 cup white wine vinegar
  • 1/2 cup extra virgin olive oil
  • 3 1/2 teaspoons Dijon mustard
  • 1 garlic clove, finely minced using a garlic press
Method
  1. In a mixing bowl, combine the red onion, salt, pepper, white wine vinegar, Dijon mustard, and garlic.
  2. Whisk everything together until well combined.
  3. While whisking as vigorously as you can, slowly pour in the olive oil in a steady stream.
Tips
  • Pour the oil in slowly so the dressing emulsifies and turns creamy
  • If you want it thicker, add an extra teaspoon of Dijon
  • Taste after mixing and adjust with a pinch more salt or a splash more vinegar
  • Great on iceberg salads, tomato cucumber salads, or drizzled over grilled chicken
Storage
  • Store in a jar in the fridge for up to 5 days
  • Olive oil may firm up when cold, let it sit at room temperature for 10 minutes
  • Shake or whisk again before using
