Ingredients
- 2 tablespoons finely chopped red onion (from about 1/4 of a red onion)
- 1/2 teaspoon cooking salt
- 1/4 teaspoon freshly cracked black pepper
- Just under 1/4 cup white wine vinegar
- 1/2 cup extra virgin olive oil
- 3 1/2 teaspoons Dijon mustard
- 1 garlic clove, finely minced using a garlic press
Method
- In a mixing bowl, combine the red onion, salt, pepper, white wine vinegar, Dijon mustard, and garlic.
- Whisk everything together until well combined.
- While whisking as vigorously as you can, slowly pour in the olive oil in a steady stream.
Tips
- Pour the oil in slowly so the dressing emulsifies and turns creamy
- If you want it thicker, add an extra teaspoon of Dijon
- Taste after mixing and adjust with a pinch more salt or a splash more vinegar
- Great on iceberg salads, tomato cucumber salads, or drizzled over grilled chicken
Storage
- Store in a jar in the fridge for up to 5 days
- Olive oil may firm up when cold, let it sit at room temperature for 10 minutes
