Ingredients
- 2 medium carrots finely sliced
- 1 medium red capsicum finely sliced
- Quarter medium red onion finely diced
- Three quarter cup chopped coriander
- 2 tablespoons toasted sesame seeds
- 300 g cooked cocktail prawns
- 2 green onions finely chopped
Method
- Add all ingredients into a large bowl.
- Add your favourite dressing. I used my Asian sesame dressing.
- Toss well and serve immediately.

Tips
- Add extra coriander for freshness.
- Use chicken or tofu if you want a different protein.
- Mandolin slicing gives the best crunch and even texture.
Storage
Best eaten fresh. If storing keep the dressing separate. Can be refrigerated for one day.
