Ingredients
- 70 g butter
- 1 cup brown sugar
- 1 egg, beaten
- 3 ripe bananas, mashed
- 1 and 1/2 cups self raising flour
- 1 cup sultanas
- 2 tablespoons milk
Method
- Butter a loaf tin and set aside.
- Beat butter and brown sugar in a mixer for one minute, stirring halfway.
- Add egg, mashed bananas, sultanas and milk. Mix on high for one minute, stirring halfway.
- Add self raising flour. Mix on low until almost combined, then finish by hand to avoid overmixing.
- Pour the batter into the loaf tin.
- Bake for 40 minutes, checking at the 30 minute mark as ovens vary.

Tips
- Use very ripe bananas for maximum sweetness and moisture.
- Do not overmix — it keeps the loaf light and soft.
- Add walnuts or chocolate chips for variation.
Storage
Keeps in the fridge for up to 4 days. Can be frozen for up to 2 months. Best served at room temperature.
