Ingredients
- 4 to 5 slices brioche bread
- 4 eggs
- Two thirds cup milk
- 1 teaspoon vanilla extract
- One half teaspoon cinnamon
- One half teaspoon cooking salt
- Butter, for frying
- Optional toppings: powdered sugar, berries, ice cream
Method
- Whisk the eggs, milk, vanilla, cinnamon, and salt together until smooth.
- Dip each slice of brioche into the custard for about 5 seconds per side. Do not oversoak.
- Heat a non stick pan over medium heat and melt 1 teaspoon butter.
- Add two slices of bread and cook for about 1 minute per side until golden.
- Repeat with remaining slices, adding butter as needed.
- Serve warm with your favourite toppings.
Tips
- Day old brioche absorbs the custard best
- Keep the heat moderate to avoid burning the butter
- Add orange zest to the custard for a twist
Storage
- Best eaten immediately
- Cooked French toast can be refrigerated for up to 2 days
- Reheat gently in a pan or toaster
