Ingredients
- 120 g baby rocket
- One medium size lemon, freshly squeezed
- Three to four tablespoons extra virgin olive oil
- One teaspoon cooking salt
- Half a teaspoon Zaatar
- One medium sized tomato, sliced
Method
- Add the baby rocket to a mixing bowl.
- Add the sliced tomato on top.
- Pour in the lemon juice and the olive oil.
- Sprinkle in the cooking salt and the Zaatar.
- Toss gently until everything is evenly coated.

Tips
- Adjust the lemon and olive oil to taste — more lemon for tang, more oil for richness.
- Add cucumber or red onion for extra crunch.
- Shaved parmesan works well if you want something more indulgent.
Storage
Best eaten immediately. If prepping ahead, add the lemon, oil, salt and Zaatar only just before serving.
