4 ingredient Pearl Couscous Salad


Four Ingredient Pearl Couscous Salad

A fresh light salad with tender couscous vibrant vegetables and a zesty zaatar dressing

Serves 1 to 2
Prep Time 10 minutes
Cook Time 0 minutes

Ingredients

  • 30 g spinach roughly chopped
  • 10 strips semi dried tomatoes drained and roughly chopped
  • 125 g pearl couscous pre cooked
  • 220 g chicken breast pre cooked or your preferred protein

Dressing

  • Zaatar dressing see my page for the recipe

Method

  1. Add all of the ingredients to a large bowl except for the chicken.
  2. Pour in about ninety percent of the dressing leaving a little for the end.
  3. Toss gently until the couscous and vegetables are evenly coated.
  4. Add the pre cooked chicken or protein of choice on top.
  5. Drizzle the remaining dressing over the top.

Tips
  • You can swap the chicken for tuna halloumi boiled eggs or chickpeas.
  • Add cucumber or red onion if you want extra crunch.
  • Use warm couscous if you prefer a softer texture.
Storage

Keeps in the fridge for up to two days. Add extra dressing before serving to refresh the salad.
